Ranger Cookies

RANGER COOKIES

Mix together:
1 cup margarine or butter
1 cup sugar
1 cup brown sugar
2 eggs, beaten
1 to 2 tsp vanilla
Sift together and add to above mix:
2 1/4 to 2 1/2 cups flour
1 tsp. baking soda
2 cups quick oats
2 cups Rice Krispies
1 pkg chocolate chips (optional)
1 cup coconut (optional)
1 cup nuts (optional)

Spoon out on cookie sheet. Bake @ 350 for 10 to 15 minutes until golden.

I should have mixed it better this is what my last 2 cookies looked like...

Granola Bars

Chewy Chocolate Chip Granola Bars

Ingredients:

Nonstick cookies spray

1 3/4 cups gluten-free quick-cooking oatmeal (I used regular Quaker no allergies in our house)
1 1/4 cups gluten-free crisp-rice cereal (again I just used Rice Krispies)
1/2 cup mini gluten-free semi-sweet chocolate chips (yep regular toll house for me!)
1/3 cup lightly packed light-brown sugar
1/3 cup vegetable oil
1/3 cup honey
Direction:
Spray an 8x8 inch baking dish with nonstick cooking spray; line baking sheet with parchment paper leaving a 1-inch overhang on all sides. Set aside. (I didn't use parchment and it was a big deal)
Place oatmeal and rice cereal in a large bowl; stir to combine. Set aside. (I put mine in a metal bowl the syrup mixture is really hot when you stir it together)
In a medium saucepan mix together brown sugar, oil and honey. Place over medium-high heat; bring to a gentle boil. Cook, stirring, for 1 minute. Remove from heat and add to oatmeal mixture; stir until oatmeal mixture is fully coated and well combined.
Evenly pour oatmeal mixture into prepared baking dish; sprinkle with chocolate chips. When mixture is cool enough to touch, press down into pan. Let cool to room temperature. Cut into 16 (1x4 inch) bars. Granola bars can be stored at room temperature in an airtight container for up to 1 week and frozen up to six months.
The only thing I think I'd do different next time is maybe add a dash of vanilla to cut the stronger honey taste?

French Bread Recipe

French Bread Recipe

5 1/2 - 6 cups of flour
1 1/2 teaspoons of salt
2 cups of warm water
Cornmeal
2 pkg of yeast or 2 Tablespoons
1 slightly beaten egg white
1 Tablespoon water

In large mixing bowl combine 2 cups of the flour, the yeast, and salt. Add warm water. Beat with an electric mixer on low speed for 30 seconds, scraping bowl constantly. Beat on high for 3 minutes. Using a spoon, stir in as much remaining flour as you can.

Turn onto a lightly floured surface. Knead in enough remaining flour to make a stiff dough that is smooth and elastic (8 to 10 minutes total). Shape into a ball. Place in a greased bowl; turn once to grease surface. Cover; let rise in a warm place till double in size (about 1 hour).

Punch dough down. Turn out onto a lightly floured surface. Divide in half. Cover; let rest 10 minutes. Roll each half into a 15x10-inch rectangle. Roll up from long sides; seal well. Taper ends. Place, seam side down, on a greased baking sheet sprinkled with cornmeal. Combine egg white and water; brush over loaves. Cover; let rise till nearly double (35 to 45 minutes). With a very sharp knife, make 3 or 4 diagonal cuts about 1/4 inch deep across top of each loaf.

Bake in a 375 degree oven for 20 minutes. Brush again with egg white and water mixture. Continue baking for 15 to 20 minutes more or till bread tests done. Remove from backing sheet; cool. Makes 2 loaves (30 servings)

Zucchini Coconut Bread

Zucchini Coconut Bread
Cream Together:
3 eggs
2 cups sugar
1 cup oil
2 tsp. vanilla
Add: 2 cups grated zucchini (you can leave the skin on); 1 cup crushed pineapple (8 oz.) drained.
Mix dry ingredients: 3 cups flour; 1 tsp. salt; 2 tsp. cinnamon; 2 tsp. soda; 1/2 tsp. baking powder.

Add to creamed mixture; 1 cup nuts; 1 cup of coconut.

Bake for 1 hour @ 325 degrees. Makes 3 medium loaves.
This is the best bread I love it with walnuts it gives it just the right crunch. Although Joe hates walnuts so usually we have to do 1/2 with 1/2 without... I've almost made it with Pecan's and that's just as good if not better than the walnuts!

Good 'N Easy Pizza

Good 'N Easy Pizza Crust

1 cup warm water

1 Tablespoon yeast

1 teaspoon sugar

1 teaspoon salt

2 Tablespoons Oil

2 1/2 cups flour

Mix warm water and yeast. Then add all other ingredients. Mix well and let rest for 5 minutes. Roll out on a round or square sheet. Add desired toppings. I do mine in the kitchen aid and it works great!

For the stuffed crust just add string cheese and fold the edges over top of it. I split my string cheese into thirds cause I'm cheap but I'm sure you could use the whole thing if you wanted and it'd be very yummy but again I'm cheap! :)

♥ Kathleen's Peanut Butter Icing

This is a great cake! I just used a Devil Food's boxed cake because I didn't want to go to all the trouble for the cake but the frosting was really great! The recipe is below!

Kathleen's Peanut Butter Icing:
1 cup confectioners' sugar
1 cup creamy peanut butter
5 tablespoons unsalted butter, at room temperature
3/4 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
1/3 cup heavy cream

Place the confectioners' sugar, peanut butter, butter, vanilla, and salt in the bowl of an electric mixer fitted with a paddle attachment. Mix on medium-low speed until creamy, scraping down the bowl with a rubber spatula as you work. Add the cream and beat on high speed until the mixture is light and smooth.

Also this is my new favorite kitchen tool! The wire is adjustable so that you can slice your cake for perfect layers!!!
